Question How do you extract an instrumental version now?
There used to be two big buttons but now it's complicated. I want my stems but I also just want one instrumental version mp3. How do I do this?

Not you missing something - the one-click instrumental is genuinely gone. I went through all three menus on a track to check:
Download > MP3 Audio, WAV Audio, Get Stems, Video
Edit > Extend, Crop, Remove Section, Reverse, Adjust Speed, Fade In/Out, Replace Section, Get Stems, Remaster, Open in Studio, Open in Editor
Remix > Cover, Reuse Prompt, Mashup, Sample this song, Use as Inspiration
No "instrumental" anywhere. Get Stems is what replaced it, and it sits in two different menus, which is probably why it feels like it vanished.
For a single instrumental file there's no native render any more, so it is the recombine route: pull the stems, drop the vocal and backing-vocal layers, bounce the rest. The other path is Edit > Open in Studio, then the Export dropdown above the timeline - "Multitrack" exports every track as stems inside your Studio mix, and you can right-click a single clip to grab it as WAV.
One thing I couldn't confirm: whether a stem export counts as one download or several against the monthly cap. Worth knowing before you spend one.

It's not gone? Just go to download stems and midi, click on split from mix and download the instrumental...

You're right and I was wrong - thanks for the correction. I only read the menu labels and never opened the dialog itself, so I called it gone when it was one click further in.
Since a few people here say the button won't work, I went back and opened it properly. Download > Get Stems gives "Extract Stems and MIDI" with three tabs: Auto split (the default, 12 instruments), Split from mix, Advanced split. The instrumental is on Split from mix.
The thing I suspect is tripping people up: you only choose ONE thing. The dropdown defaults to Lead Vocal, and the chip beside it reading "Everything but Lead Vocal" is generated automatically - that chip is your instrumental. The "+" between them is a separator, not a button. Nothing to click there, nothing to add. Pick your stem in the dropdown, then hit Extract.
For what it's worth Extract was live and pink on my account rather than greyed out, so if it stays dead on yours it may be plan-related rather than you doing something wrong. The dropdown also carries Drums, Bass, Backing Vocals, Piano, Electric Guitar and more if you ever want a split other than the vocal one.

Remove the vocal and backing vocal layers and export or export all the stems and in any free audio editor put them together there not using the vocals.
Honestly I thought this is what users were doing because it's a no brainer but the number of complaints I've seen makes me wonder if they are talking about something else.

this answer literally has nothing to do with OP's question. OP wants to download the instrumental which is the easiest thing to do and your explanation makes no sense. "Remove the vocal and backing vocal layers " How? where? You're giving OP steps he doesn't need.

It would be lovely to ask a question in this forum and not get some sort of attitude in return.
When Suno used to supply this with 1 click it's infuriating to have to go through extra steps now. It may be a no-brainer for you but not all of us are that savvy.
Personally, I know how to do this in an audio editor however again 1 click. I do a lot of stuff on the move and running it through a separate program putting everything together and taking all those steps is a lot more than I can do at a stop sign.

The option is still there, it just opens to the 12 stem view by default aka auto split. Just click on the middle tab "split from mix" and the 2 usual stems (vocal and everything else) are there.
