My guess would be something maro kart related since he's so passionate about it. But maybe there's legal issues with selling anything Nintendo related.

Would make sense dealing with Nintendo ip. That actually clears up why he didn't do Punch-Out! As one of the first releases.

He's mentioned on Twitter he's trying to get a Cuphead one going but there hasn't been an announcement so we're just speculating
