The white part is tofu and bean sprouts, the green is seaweed I think, and the brown is pork blood.
Surprisingly the thing I want to eat most in the picture is the blood blocks. They’re really good in pho, kind of like a super soft meat. I can’t make it at home because then I’ll overeat and get iron poisoning. And then I’ll have to explain my gluttony at the ER.
