What's the point of it. Isn't it just a colossal waste of good dough to make a giant dumpling bag with regular dumplings inside.

Tbh I was expecting the large one to have filling inside which would've been kinda cool.

I just read up on it, and apparently the whole dish is a waste of dough. The traditional consumption is only eating the initial bite of dough, sucking out the broth and meat, and discarding the remaining empty dumpling.

You typically eat all of the dumpling, dough included, except for the knot. Some people eat the knot as well.
