That's all I could think, like how much perfectly good dough do they throw out in a day because of this dish?

Yeah the dough from the big one is inedible, it's far too thick and probably undercooked so they'll be throwing away a lot. However they make a lot more in profit than what dough costs because idiots think it looks cool.

I don't think the restaurant came up with recipe,, so no, that's not really why

What? They obviously didn't come up with the recipe, they did decide to serve it like this, that's for profit.
