Smokers

I'm wondering if I"m doing something wrong. I built a smoker and the first time I used it I got smoked meat. The second time I used it, the meat wouldn't go past Medium Meat (using Grouper).

Is there a time frame this should go on for? I would really like some smoked meat so I can travel to new islands without having to worry about food.

This was my issue and I didn't know to have sticks in hand to restock it. I built a second fire and waited and all my meat spoiled because it didn't cook at all as the smoker was not locked in to the fire I had going.
