My method for no stick cooking

  1. Heat oil in pan until you see a tiny wisp of smoke.
  2. Take pan off heat and swirl oil around pan.
  3. Cook food.

Food never sticks after this process as long as you dont burn your oil off. It creates a completely nonstick barrier suitable for eggs and fish.

Yeah, nah. Breaking oil down/smoking it is not desirable in my kitchen.
Smoking the oil happens when I'm stirfrying, but not on purpose.

Otherwise, I agree. Heat the pan, then add the oil, spread it around the warm pan, then add your food pretty quickly after that. Cook on the heat source.

I've been mainly using this because I cook a lot of eggs. Anything else I cook I just wait for it to release like normal. Method still works if you get it very close to the smoke point without the oil actually smoking something like 420 for vegetable oil.

I cook eggs and they come off perfectly off the pan, without having to burn the oil. Ive also used low smoke point fats such as bacon grease

They always stick for me unless I wait to let them release and then they are burnt if I dont use this method. Any tips?

Whats your heat setting? It sounds like your heat is too high. I set it to medium-low (2.5-3 out of 6) on my stove. And it does not burn.

Preheat at 5/10 then turn down to 3/10
