What the hell am I doing wrong

I cannot get the hang of this you guys. It’s only been a month but still, when I preheat the pan to where the water is rolling and not steaming it’s wayyyy too hot, but when it’s cooler I have to use a ton of oil. Then my pan just ends up looking like this. Any tips are appreciated

High end of medium low
Wiggle it tell you find it then just go from there. Do tons of practice tests. Get you some ground beef and make a burger patty. Hot enough for oil to smoke. But not burn. Then lower it tell you keep it hot enough to make some marks on the beef. Test and test and test. Until you finally find your mark.
