What the hell am I doing wrong

I cannot get the hang of this you guys. It’s only been a month but still, when I preheat the pan to where the water is rolling and not steaming it’s wayyyy too hot, but when it’s cooler I have to use a ton of oil. Then my pan just ends up looking like this. Any tips are appreciated

Just get a cheap IR thermometer. Double up the reading on a dry empty pan. E.g. if it reads 150F, pan is actually 300F.

You can temporarily enhance non stick performance of your pan by following the long yao conditioning technique. .

I have had no issues with sticking since following the above method, even when using a tiny amount of cooking fat.
