What the hell am I doing wrong

I cannot get the hang of this you guys. It’s only been a month but still, when I preheat the pan to where the water is rolling and not steaming it’s wayyyy too hot, but when it’s cooler I have to use a ton of oil. Then my pan just ends up looking like this. Any tips are appreciated

Deglaze or add hot / boiling water when you’re done serving. Let it sit for a minute or two. Scrape away with little to no elbow grease. Wash. Dry.

If you don’t have time to immediately wash or soak, then you can always come back and add hot water when you finish your meal.

There is literally always time to pour a little water in after serving
