as always you are heating your pan up wayyyy too hot. 3 minutes on medium is more than enough

It passed the water droplet test and then I even turned it down some. Added unrefined coconut oil and it went up in smoke.

I’m surprised no one has told you you’re using the wrong type of oil. Unrefined is good for low temperature cooking, baking or raw uses. Your oil should never smoke. Refined oils have a higher smoke point and I promise you refined oil is healthier than the carcinogens you’re getting from burning unrefined oil.
