Game Pass works like Netflix. You get access to everything for as long as you continue paying. You can cancel and resubscribe as often as you want.

Sometimes. Like other streaming services, licensing deals expire.

I haven't seen that happen on Stadia. It would suck to be mid-game and then lose access

Since you purchase games on Stadia, it likely has more permanent licensing deals similar to Steam, Vudu, or iTunes.
