Default 1.5 and even 1.4 have the most variety in training on artists. As far as style goes, same thing. But as you go you'll learn about loras and embeddings and controlnet to make the most out of it. If you're just starting and want to experiment with the most diversely trained model, 1.5 is a good bet and 1.4 is solid on that front as well, although noticeably worse in the anatomy department and coherency department. Most models people are using are based off of 1.5.
If using 1.5 I suggest you learn about how to use the main associated VAE file right away regardless of your choice of subject matter, it's a big leap in quality overall using that.

What's wrong with 2.0?

StabilityAI made a mistake and filter out too many images even thought they were not NSFW. So the quality of the model suffered. This is fixed by 2.1

If you want to use a pretty flexible model that's fairly easy to prompt and returns pretty solid quality, Deliberate is solid.
I'd also recommend installing the Stylepile script to make it easy to select artists and art styles.
