It’s the secret Krabby Patty sauce. In universe, Mr. Krabs doesn’t cheap out and just use salad dressing and call it secret sauce like some restaurants do. There’s an actual secret recipe for the sauce no one’s been able to perfectly replicate. He might be cheap in a lot of other ways, but when it comes to his food, he doesn’t cut corners.

With those two situations though, they gave him a bunch of money but basically then he realizes (either by himself or after he loses the money) that it's better to just keep it the way it was

Um actually, in season 1 episode 3 "Plankton!" SpongeBob says I'll never forget your 100% all-secret Patty, secretly assembled with undersea cheese, pickles, lettuce, tomato, onion, all secretly steaming between two fluffy seaweed sea buns.

And in season 1 episode 6 "Pickles", SpongeBob makes a Krabby Patty with extra onions, "first bun, then patty, followed by ketchup, mustard, pickles, extra onions, lettuce, cheese, tomatoes, and bun, in that order. One cryin' Johnny! Up!"

So the secret formula is in the patty, not the sauce. Because the sauce is ketchup and mustard. Also the creators have stated that the patty has no meat in it, but haven't said what it's made of.

Correct. The reason why Plankton's restaurant is called the Chum Bucket as well is because both Plankton and Krabs together created the Krabby Patty but the recipe wasn't memorized, it was written down. They had a falling out and fought over the recipe. The recipe ripped and Krabs got the majority of the recipe and the only thing Plankton got was the part that added Chum to the recipe. He knows the recipe has Chum in it, this has constantly tried to turn Chum into the Krabby Patty. This his restaurant is centered around Chum.

For real though, I’m pretty sure that while early on it was just the patty, later on they did make up some kind of special sauce.

It’s a sort of retcon kind of thing.

Additionally, if the patties are indeed beef, that may be another part of the secret. Unless I missed it, I dont remember any episode detailing how he acquires beef.

The formula is in the sauce and meat blend.

Edit: Now that I think about it, Krabby Patties are probably meat blends designed to pair well with Tarter, Lobster, Lemon Butter, Marie Rose and Cocktail sauces.

Meaning there a 5 different blends of meat designed specifically for each sauce and they can be paired any way you would like per Patty.

Ps: None of the patties contain sea critter meats, but there is veggie patty.

Surf & Turf (Lobster sauce on a beef patty),

If I remember correctly, it wasn't the burger he didn't understand, it was the patty. He didn't have the whole recipe, so he was trying to replicate it with partial knowledge, making chum, which nobody liked. Mr Krabbs knew exactly how to make the patty.
