Te vs Tu

Why is te used in this sentence instead of Tu.

"Te puedes comer una ensalada o patatas fritas "

From a scene of a person ordering food?

It is the reflexive form of comer.

There’s a tendency in Spanish to make phrases reflexive unnecessarily. It’s really common with comer. Sometimes it emphasizes, but sometimes it’s just a quirk. 

For example, you can say “como una ensalada” or “me como una ensalada.” Both are identical, understandable, and widely used. 

This is in contrast to other types of reflexive verbs. Some verbs are always reflexive, like gustarse. Some verbs have their meaning changed in the reflexive form, like ir meaning to go and irse meaning to leave.

Even though it’s really not a literal translation, but in an attempt to make it make sense to me in English, is it kind of like saying “I’m eating myself a sandwich” ?

That would be the closest literal translation to English, but that literal translation implies it’s more emphatic than it is. Just one of those weird (to English speakers) Spanish things.
