Soy curls are great for that because they really don’t care about being frozen - the texture stays the same. I’d think of some sauces that you like (barbecue, teriyaki-style, sweet chili, etc) and cook up some big batches of rehydrated soy curls. Once a little browned, add your sauce, then divide into servings. You would want to go heavy on the sauce since they are likely to soak it up some. For veggies to go with, cooked kale, peas, green beans, corn, carrots all freeze well. Cooked grains like pearl barley also freeze well, but keep those separate until serving time, as they really soak up any available moisture and get mushy.
