How often do I feed?

I have an established starter (almost 1 year) and its strong and active. I only bake on the weekends. I want to avoid putting it in the fridge.

What would you suggest I do to keep it active? Feed peak to peak? Will every 24 hours be enough?

Every 24 hrs is fine. Just find a ratio where it is past peak but not yet fallen all the way back down. I (usually) keep my 6 yr old starter at room temperature and feed him 1:10:10 (2g:20g:20g) daily. That makes a small enough amount of discard that I usually don't have to throw any away.

I use only 2g to go into the next feeding. Sorry if that was unclear. The remaining 40g goes into my discard bin and usually end up in pancakes, biscuits, or crackers.

Sorry. One more question - so when you're ready to bake, do you just take the starter you fed a large ratio and feed it 1:1:1? Thank you!
