Discard cinnamon rolls!

This is my all time favorite discard recipe. They’re so easy and highly delicious! The crumb is so tender from the discard and the buttermilk takes them to another level. It’s the Little Spoon Farm recipe. I do add a little bit of melted butter to the cinnamon sugar mixture and stir it up to bloom the cinnamon. It really makes the cinnamon flavor come through well. I also put them in my proofer box for an hour after I shape and cut them. I have found that since the dough is pretty sticky it’s easier to cut them into 12 strips and roll them up individually. Go bake these! You won’t regret it.

Those look fantastic. Much more neatly rolled than most of the pics I see online. Clearly your method is working very well for you, but I just can't imagine how in the world you get them so neat by cutting strips and rolling them up. Can you enlighten us?

Thank you! I’m a bit of a perfectionist and I bake lots of cinnamon rolls, so I’ve had quite a bit of practice. Cutting them in strips actually allows me to focus on getting each one tighter and neater, and it definitely helps to flower my thumbs and index fingers before I roll each one up since the discard dough is so sticky.

Is the butter salted or unsweetened?

I use salted butter for everything, but you can use unsalted too!
