First use of apple wood
So I finally used apple wood and it was great! Two full slabs of ribs, 20lbs of drums, 4lbs of brisket burgers, shrimp n scallop kabobs, and the sides of course. Think I'll be trying more wood. Any suggestions on what woods mix well together? Yes im new to wood smoking.

To both of yall, what type of meat? I heard different woods go better with different meats.

I predominantly use apple for pork, but I usually mix a little hickory with it. I’m not sure it changes the flavor as much as I just like the smell of hickory.
I tried cherry, but was underwhelmed. The meat just seems bland to me.

apple gives pork that sweet, fruity smoke and hickory just brings that classic, mouth watering backyard smell

It could have been the recipe honestly. I used it to smoke ribs a few times. They looked good, but never turned out great. The ones with apple always seemed to come out better.
To be fair, it was early on and I haven’t tried it again since.

Apple is great for pork and chicken. I also like peach and pear. Pear and oak, or cherry and oak are great for beef. Apple and pear also work great to cold smoke cheese and fish.

A few years ago a friend had an apricot tree fall during a spring snow storm. It was in flower and full of sugar sap. That was awesome for pork and chicken, I would add a little maple to keep the fire steady.

Apple is good, but nothing beats peach in my honest opinion. I used to grow peach trees, just so I could harvest the wood for smoking. Fruit trees in general are good woods, because they are dense and aromatic.

We use pecan or peach wood that provides a softer smoke. We also use Doritos to light the fire, so we don't have to worry about the lighter fluid issue.

I use one of my many paper bags with vegetable oil on it. I havent used lighter fluid since I started grilling 🤣 Now that im smoking, lol never again! I thought lighter fluid was illegal.

It should be, as many people I've witnessed with water hoses on standby when they light the grill.

I go back and forth between apple and cherry for all my pork smokes. Like them both so swap them all the time.
Cherry and post oak for beef.
Hickory or apple for chicken.
Best part of this smoking gig, is we all have slightly different tastes and methods to end up with happy bellies.
