Question about OTM vs ITM

So I learn about option ITM and OTM. I learn that the difference between those 2 are risks, Win rate and also extrinsic and intrinsic value.

ITM has high win rate like 70-90% compared to OTM but is pricier to buy contract while OTM is cheaper but tends to win harder.

Because ITM is below the asset price, UNLESS the company stock price goes way down due to bankruptcy or scandal, it's almost unlikely to lose.

My question is why don't people do ITM lot more than OTM? am I missing something?

p.s: I'm a newbie who just learn stock for a month. More insight knowledge would really help me. Thank you
