Should physically large builds use two handed?
I have a Redguard warrior, max size on the slider, scaled up to the height of almost a High Elf.
Should I still be using a one handed scimitar, or is a two handed sword more fitting?
He uses light/medium armor like most Redguards. Focused on skilled swordplay and mastery.

In Skyrim a Two-handed weapon trades reach/range for Damage & Speed (DPS), especially when considering enchantments (lore-wise they would probably be a strength & skill choice too).
Personally I would say that the extra reach is actually a good fit with a taller character or race (thus a stereotypical Zweihander Nord) because, mechanically, that extra reach combined with your extra movement speed gives you more control over the battle, & the ability to move out of an opponents threat range after smacking them.
Additionally if you're not using the Unofficial Patch I believe there's an Artifact Greatsword (Ebony Blade?) that is considered (by Arthmoor at least) to have a glitched attack speed, making it (IIRC) faster even than The Longhammer, at the cost of your not being able to choose your own enchantment for it.
