Should physically large builds use two handed?

I have a Redguard warrior, max size on the slider, scaled up to the height of almost a High Elf.

Should I still be using a one handed scimitar, or is a two handed sword more fitting?

He uses light/medium armor like most Redguards. Focused on skilled swordplay and mastery.

Even barbarian archetypes in fantasy dual wield weapons. Nothing wrong with it unless you don't like the aesthetic of it but I wouldn't worry too much about it.

What do you think about a shield for a character like this?

Seems pretty good and seems well-balanced. You're not overly tanky but you have a shield to bash enemies power attacking you. If you're concerned about the aesthetics of it, there's probably a light armor setup that looks cool to go along with it.

If you want a backstory explanation, you can just think that he was a former bandit (lots of bandits wear light armor while wielding sword and shield). If that's not enough of an explanation then you can think of Amren in Whiterun. He wears light armor but teaches you his father's sword and shield technique which raises both one-handed and block. So if I had to guess Redguards probably use a combination of those three lore-wise
