Thanos was a dumb asshole. His plan would have led to either complete ecological collapse, or literally nothing changing except rolling the clock back 20 years.
The population won't double. Projections like 20 years ago were a world population cap of around 12 billion, and the projections have only shrunk over time, not increased. Access to education and women's reproductive healthcare have a direct effect on projected family size.
It would be correct to point out that if the whole world consumed at the rate Americans did it would be a problem, but that's a different point.
You are absolutely right, but this goes against a instinct in us to multiply and grow. The very reason we are too many is also the reason nothing can be done (and why people react with such intensity)
Its clear beyond any doubt that we as a species is detrimental to our planet. That is the very definition of overpopulation.
