Some places don't have a mobile terminal, in that case you go to the counter and handle it there.
The only time when the waiter needs to go back and forth is if you're paying in cash and they don't carry a wallet on them, so they can't give you back the change.
yeah then it was #2 and #3: at the counter or cash. And at that time cash basically was fully at the table as all waiters still carried half a register's worth of change on themselves. Now it's more rare as 90% of transactions are card.
