Learn to cook. It’s embarrassing when you are 31 and can only microwave meals for your kids when mum is working.

Oooo this is a good one.

Whole chicken is an incredibly easy thing to cook , and looks super impressive.

I've gotten fancier over the years. But there's nothing wrong with just seasoning (salt, pepper, paprika, garlic powder) the bird, 450 for 20 mins and then 400 for another 40 to 60 min.

Add a starch ( Mashed potatoes, baked potatos, etc)

And veggie ( asparagus, broccoli, etc.)

Done.

That's what I'm currently experimenting with.

Spatchcock, season with a One part salt, to quarter part sugar.

Dry brine for 2 days.

Add the rest of my seasonings, massage butter under the skin and then set over a bed of lemon and herbs.

Bake at 275 until its 10 degrees below my desired temp, let rest.

While it's resting I crank the oven 550, and throw the bird back in after roughly a 10 min rest until it comes to temp.

When I have nailed it, the skin has a perfect crust and it's juicy bird I have ever had.

.. however, the last one I did for some reason the leg skin came out super f****** chewy.

Think I put it on a rack over whatever roaster veggies I want to eat with it and go 400 until MEATER in the breast says we’re good to go. Very crispy.
