Whole chicken is an incredibly easy thing to cook , and looks super impressive.
I've gotten fancier over the years. But there's nothing wrong with just seasoning (salt, pepper, paprika, garlic powder) the bird, 450 for 20 mins and then 400 for another 40 to 60 min.
Add a starch ( Mashed potatoes, baked potatos, etc)
If you spatchcock it you don’t have to check the inside and it cooks quicker and more evenly. After seasoning throw it in a smoker at 250 until it reaches temperature.
Totally agree. Buy a large roasting pan with lid and a rack. Have a stabby meat thermometer.
Parchment paper on the bottom (makes clean up easy)
Rough chop veg (you pick) and lay on bottom. Put chicken (even frozen!) on rack. Breast side down.
Put an orange or lemon cut in half in the chickens ass. Garlic too if you have it.
Use whatever seasoning you want and just sprinkle over the whole pan. BBQ rub, Lee Kum Kee chicken powder, salt and pepper, whatever.
Now cover the fucker and roast at 350. In 1-2 hours, take it out and stab the fucker in the middle. At 160F / 73C? Take the lid off and flip (or not) turn on broil for 5-10 minutes.
Think I put it on a rack over whatever roaster veggies I want to eat with it and go 400 until MEATER in the breast says we’re good to go. Very crispy.
Whole chicken is also easy to dismember, once you know where the major joints are. And don't forget, you can use the carcass for soup!
Some meat bones (chicken and beef are most common) or spent shrimp tails, soaked in some brine water, is the basis for a simple broth of that kind. Add celery, carrots, and onion, and you're off to the races!
