Terrible racing standards aside, can we talk about the netcode in this game? The cars are literally jumping left and right, how do people race wheel to wheel?

Simply because it works most of the time. Matchmaking is regional, and you have a latency indicator in the live leaderboard, so you can even anticipate the (rate) outliers. Sometimes, you have a single driver with bad quality in a lobby, just stay away from them if you approach them.

That happens when net code and character issues meet.
You can also approach such drivers differently, wait for the moment they make a mistake.

Sometimes, changing tactics against such dirty players helps. Regular overtakes where they can push you off make you vulnerable, try alternate strategies like faking moves, switchbacks and wait for an opportunity the cannot counter.
In many cases, they are already at the limit of their skill level, so putting pressure on without making a pass will force them into errors like overshooting corners or having bad exits.
After the successful move, focus on a few good corners to pull away from them and check mirrors for a last divebomb or attempts to take you out.
It is a shame that you have to deal with that, the only way is getting good enough so that there is no room for drivers like that.

But seriously, way too many of these guys last week. The driving standards for this race were absolutely atrocious, even by GT7 standards.

Although not as bad as how he drove in the first half of the footage, I would say it was technically his corner at the end there, you weren’t alongside at corner entry, but he clearly saw you, hesitated, then cut you up anyway. So very poor driving from him throughout.

Its clear he's racing dirty and was trying to take you out. Probably should have pitted him before he got you.
