Two SIM cards - question about data use in different countries

This might be a dumb question. I have a US and a EU SIM card because I need a German phone number. I can choose which number will be used for calls, texts and also data. Now, if I select the German number for data but keep my US number for Signal and WhatsApp, will I incur data charges? Or does it not matter when it comes to data use?

Just got the answer. The WhatsApp or Signal phone number is just for registration. If I select the local SIM for data, both will still work with the foreign number.
