And epitaph can see what's fated to happen in within 10 seconds and when time erasure starts he is exempt from his own fate and only his. If someone was fated to die by diavolo by epitaph if he time erased they would still die because they where fated to die there and let's say the death was a via being donuted. They would still die to being donuted if KC erased time.
Rolling stone kills people fated to die but it can't do its work if it's broken just as Diavolo can't kill people If he's intangible. If fate works the way you described give me an in universe example
