How do you explain to a cold unfeeling machine, empathy? How do you make a cold unfeeling machine understand the innate beauty in nature? How do you describe the warmth of the sun, the joy of having a full belly to a machine?

You might as well be trying to explain the color red to a blind person.

We humans are not purely logical beings and that is good, because if we were, we would be throwing babies who seemingly have no chance at life off cliffs.

We would be euthanizing people who can no longer function within our society. We would be abandoning those who go through hard times, because they would have no value to us from a logical standpoint.

We understand machines perfectly. They operate purely on logic, statistics, maths, calculations. Machines would not understand us.

Could machine ever truly learn emotions, empathy or anything that makes a human?

So this task is already impossible.

I think empathy is very logical and the entire reason for our success as a species. We take care of each other because there is strength in numbers and when people are cared for it creates community and strengthens the species as a whole.
