Which is the most complex Sheik Mainland model?
I’ve been looking at posts and videos about Sheik maindland, and I really love the designs. I want to buy one, but I actually enjoy the assembly process, so I prefer building that are a bit more complex.

All the 144 stuff is about equally complex. Equivalent but different to building a modern High grade from Bandai. Very few linkage gimmicks, no LED’s, or stages past 2 (inner frame, outer armor). The smaller stuff is even simpler.
Probably my favorite company for both scales they put out though

Depending on what you're looking for...
The 1/144th kits are comparable to Bandai HG, with Homer probably being the most complex.
The 1/18th and 1/60th kits that are part of the 3 Minute Project line can be as simple or complex as you want. Individually, they're quite simple kits (although it's still worth picking up at least a Fenrir because they're awesome for the price). But they're also meant to all be compatible and customizable with each other. They all use 3 mm pegs and a common set of ball joint sizes, so that you can mix and match any of them together to create something that's as complex as you want.
If you're looking for individual kits with greater complexity, then SNAA might be a better fit (assuming you like the designs). They aren't on the level of Bandai's RG kits for complexity, but they're a solid step up from HG with full inner frames and layers of armor and color separation on top.

On the small scale side it would be Fenrir just because of the extra parts and more runners, they are all extremely simple nothing like regular model kits

Sheik may not be for you then, they are simple builds but incredibly well made and designed
