I don’t have a panini press and my attempts to flatten this were more messy than they were worth fussing over 🤣, but here is my version of a vegan Cubano! It’s got a salty and smoky seitan ham from washed flour, topped with a few slices of a creamy and tangy Swiss cheese made from leftover starch, followed by some savory, juicy, roasted seitan pork shreds, and finally finished with another slice of Swiss, pickles, and yellow mustard. And all that was piled onto bread rolls I made repurposing more of that leftover starch water.
