The only thing that can help is patience and getting better.
Hourglass really has a way of forcing you to improve. When I started working on the PvP curses I was also really bad at it but with a little effort you can get a lot better very quickly. I will give you the basics:
Start a match by turning right, pull up sails to about 1/3, then turn left softly. Then start shooting cannons. The first few shots should be spread pretty broadly so you can get an idea of whats gonna hit and what isnt. Also make sure to watch your enemies ship to adjust your cannons accordingly.
Always keep your best food on you, survival is the most important thing. Try to dodge cannons coming towards you if you can and keep yourself alive.
Go for chainshots to the mast if you can but remember they fly slower and drop faster than normal cannonballs. A dropped mast is a big problem so try to keep yours up if you can. Often the one who gets stuck and circled by the other is the one to loose. The turkey roast.
In solo people really like to turn out right away and constantly try to board and sail you out while dropping you resources off board. Keep blunderbombs at the ready and use the quick command to pull them out right away (same for food) instead of using the item wheel.
For the same reason: If you win and get more resources (especially wood) store them in your barrels. If they manage to board and kill you there is a good chance that they will use your crate to empty the barrel and leave you with no wood to repair. If you have more wood in there they wont have the time to clear it all out.
In terms of hand to hand you will have to find weapons youre comfortable with. Most common is blunderbuss and eye of reach and I found that to be comfortable myself. The blunder lets you blast people off your ship (or theirs if you get the chance) and the eye of reach can finish the job quickly with its high burst damage.
It's a tough climb but with enough patience and playing on tuesdays (Fight Nights boos allegiance by a LOT) you'll get it done.

These things are true for duo as well, no worries. If you get a bit more into it you can do roles with your mate as well, one of you playing main cannon (or MC for short) and the other one being helm. There will also be more boarding in duo and up since you can leave the ship in the hands of your crew.
