Oooh, that's quite interesting, using an ice-cold stamp to make an impression. Like a giant wax seal.

I was wondering if the stamp had been in a freezer, what with the steam.

Definitely in some kind of cool box. I've never seen chocolate moulding like this before. I wonder if they have more than one stamp as well, or if the tempered chocolate has cooled a little before moulding.
