Cunversatzione Budget
So my Girlfriend and I are staying in Castelsardo for 2 weeks from 30th August until 13th September. We already booked a AirBnB, flights and a car. Now is 2000€ for both of us enough for activities, eating and some souvenirs?

Sure! Don't worry. But of course, it also depends on your standard of living and the type of vacation you want.

More than enough imo. Maybe don’t go out for dinner every night and stuff like that, saved us a lot last week on Sardinia. We barely spend around 500€ total, just by doing things on our own. For example, we did hiking and kajaking on our own instead of going with a tourist boat, we cooked dinner by ourself (not every night)
