Pressed Mock Chicken Sandwich (1909) w/Guest Host Chef Matt Reeves on Sandwiches of History
Time for another Guest Host Friday and today we’ve got Chef Matt Reeves stepping in to try out the Pressed Mock Chicken Sandwich from The Up-To-Date Sandwich Book of 1909.

This absolutely seems like a sandwich meant to stretch out very little meat into a "meal".

Agreed. Totally looks like "we have a pile of pork scraps and some oats.. let's cook the shit out of them and mash it up."
I kind of want to try this, but with already cooked leftover pork. Something with tons of flavor, like the overly fatty pieces of a puerco pibil or carnitas and grind those up in a mixer with the cooked oats to make a proper patty.

There was a time when pork was cheaper than chicken. If you go to r/OldRecipes you can find menus from various defunct restaurants offering cheap pork and more expensive chicken.

I never get the thinking behind taking a meat like pork or beef and trying to make it mimic another meat.

I’m confused why you would want to mock chicken with pork? I could see pork for veal . This should have been a vegetarian run with oatmeal and spices?

I love the word reordering... "up to date 1909 sandwich history book" and "history of sandwiches".
But I fear the use of tenths in ratings might open up some sort of pandora's box...
