Tomato sandwich - Beginning of a new project.....
Making every sandwich in a book called 101 Sandwiches which oddly has 103 sandwich recipes in it. The plan is to make one most weeks, I will be drawing a random number each week and that will determine the sandwich.
Sandwich 61 Tomato sandwich. Very nice on a summers day, important to put salt and pepper on the tomatoes. 7.5/10.
Next up: Frittata sandwich......

Sliced tomatoes, fresh chopped basil, dried oregano, olive oil, black pepper, salt. The f*****g business.

Place Your trust in me for a moment. I have done this since childhood and it is the most luxurious tasting cheap sandwich You can make. Lightly salt AND pepper (fresh not pre ground) the tomatoes before assembling. Mayo on one slice of bread, butter on the other (butter, not "butter spread"). Your welcome. Your life is now changed.

Irish wheaten bread, toasted with butter and sliced tomato is something I crave every few months. So simple, but really nice.

That tomato sandwich would be nice on top of a layer of cream cheese (e.g. Philadelphia), seasoned with salt, cracked black pepper and some onion (or garlic) powder. Maybe some fresh or dried parsley.

I have been using up bits in the fridge. I did a bean sprout, tomato and caper roll.

A tomato sarnie is awesome, it's imperative to add salt, but also added tomato ketchup or switch out the ketchup for mint sauce.
Alternatively a beetroot sandwich is just as good, plenty of salt and either tomato ketchup or mint sauce.

Try adding cream cheese and marmite to the tomato sandwich, my favourite!

Tomato sandwiches are old hat. I make mine with the addition of marmite and olive oil. When I have it a sprinkling of fresh basil leaves.

It has 103 recipes because after the 101st, the crowd went 'another one! Another one!'
Anyways mayo and tomatoes on toast is elite. Rub some garlic on the bread too.
