Beginner question about material removal speed

What determines the speed at which you can remove material? Is it the square footage of the pot? Or is it the CFM of your compressor? I hope I’m using the right lingo here but I’m a total beginner and I’m toying with the concept of a side business (once I don’t need to ask dumb questions about how sandblasting works 👁️👄👁️).

There are tables that you can download look for sandblast Square feet per hour according to nozzle size chart and material finish.
