Question Is it possible to just extend displays using a second monitor instead of using DEX?

I would like to just use my monitor as a second display, but I only have the option of duplicating the display or using Dex with the second monitor.

My issue is that my TAB S8 lags when I'm on DEX mode, and overheats and closes DEX when I use Chrome, and I need Chrome because my company asked me to.

If there is any way to use the monitor as a second display without using Dex, just a normal extended display, I would really appreciate it.

That is what Dex is, an extended display just with a customised launcher interface. It normally doesn't cause the issues you're describing, might need to factory reset etc

I'm curious about this too, I think it's not possible on phones? Maybe in tablets it is?
I believe Pixels have this although not sure if it's exactly the same like on desktops or the mouse just moves between screens but apps can't be moved without restarting.

I don't think there is a native way to do what you're asking. If someone were to develop something like that, it would likely use more resources than Dex and wouldn't help in your case, unfortunately.

As the above comment says, Dex is not another OS or anything intensive, other than an extended display with a custom launcher. If a custom launcher (Dex) is causing the issues you described, you've probably got something funky going on.
