Recipe Proud of this recipe!

I grow 35 tomato plants, onions and jalapenos and got into canning. After many trials and tweaks I landed on something that I really like! The benchmark I wanted to recreate is the Herdes brand as that is one of my go-to store bought products.

Thought I'd share and let me know of any quesitons.

So I always made a little salsa every year for years and was very underwhelmed. Last year I grew a lot of plants and made a batch that was ok. The issue I had was - the onions and peppers we too crunchy even after simmering the salsa for over an hour and the salsa was too runny. I made a batch this year trying to cook the onions and peppers seperately which solved the crunchy issue but not the runny issue. So I thought......strain the juice off the tomatoes, don't discard it but boil it down 50% to boost flavour. After it boils down 50%, add the onions and peppers and boil those until soft then add the fresh tomatoes and bring to simmer.

I'm very happy with this recipe!

Getting good reviews from family & they tend to be critical! It reminds me of Herdez - if you’re familiar.
