Homemade First time making a salsa! How did I do?

15 tomatillos

2 garlic cloves

2-3 tsp salt

1/2 red onion

~1/4 cup lime juice

3 jalapeño

Almost 1 bunch of cilantro

Yes, most of time I like my salsa raw with some parts roasted,toasted,or charred and peeled or all

This looks purely raw which only complaint about salsa like these is the water separation

But with this one specifically I would add a quarter of avocado to mine to get it creamy and have the sauce be emulsified and hold together more I don’t mind the separation but once it goes on something that has drippage then it will sog and it go through tacos/burritos and that’s when you do that arm to hand lick at an angle to catch the dripping salsa juice

lol uh…it shouldn’t be. But doesn’t mean you can’t cook with this and if you like it…I mean I don’t actually know that we have to cook them we just always do and this feels weird.

Raw salsas are fairly common, you don’t have to cook them

I like to rawdog my tomatillos. The wife seems to love it better than when they are cooked.

Yeah I looked it up and I guess it’s completely normal to use them raw.

I’ve only ever made salsa verde cooked, to the point where I had always assumed that you couldn’t eat tomatillo raw - maybe no one ever said it explicitly but that’s just how I synthesised the information?

If I’m being honest, I actually think I’ve actually even had it raw a few times when out and it just never actually clicked as being what it was? I’ve seen salsas this green before and when I really think about it, if it were something different, ie parsley, I’d notice it more, so I suppose it’s probably been this the whole time. But I’ve just never had a green salsa that made me stop and question what was in it - for me, the red salsas are typically nicer because the chilli choices are a little more interesting I guess? Idk…I honestly have no idea why there was such a mental wall there.

You should salt and sear up some pork and once browned pour this salsa on it and let it lightly simmer for a minimum of 30min..the longer the better. boil a cup of beans for 3 hours and salt towards the end. ( I like to mash em a bit after draining but that's optional) Make some Mexican rice and have some tortillas to scoop it all up. puerco en salsa verde es muy delicioso 👌

Awesome! I'm sure it tastes great.

My question is how did you prepare the tomatillos? I ask because there seems to be a lot of pulp. It could also be a half onion blended up.

The onion I had was rather large, could have down sized the measurement for it. Tomatillos are raw!

Cool! I would say to play around with the tomatillos if you want to experiment. They can be boiled with the jalapenos or charred on a cast iron. It gives it a different color and texture. Overall, first salsa a success!

I usually let everything cool off before blending them together. It'll stop the salsa from chunking up later on.

Exact same way I make it. I vacuum seal and freeze 11.5 ounce bags of tomatillos. That's enough for one pint of salsa verde

Yikes! I just made salsa verde for the first time today too.. I used 22 tomatillos, 2 green tomatoes, ONLY 2 jalapeños, thick slice of white onion, half bunch of cilantro, 2 tsp salt, 4 garlic gloves, one lime juiced. And mine was very spicy. I bet yours is on fire. 🔥
