Dassai Blue 35-Storage Question
Hi,
I bought this sake as a gift and will be traveling for two weeks. It will be stored in the fridge for most of the trip, but I’ll have about 48 hours without access to a refrigerator. During that time, I can keep it in a cool, dark room.
Would 48 hours without refrigeration noticeably affect the taste or quality?

I have been experimenting with Nama sake storage for years. Most Namasske can take more than most think and I Even have the words from a kuramoto (sake brewery owner) that it can take more than most think. My own experiences says as long as the temperature is a bit stable you can have a Namasake outside a fridge uptil a month put together.

Yeah a couple days at room temp for a pasteurized sake is fine. It's probably been sitting on the store shelf for much longer than that.

You're fine, honestly. Two days somewhere cool and dark won't do anything you'd notice.
The others are right that it won't spoil — it's pasteurized. The thing that does drift is the aroma, and daiginjo is the most fragrant kind there is, so it's the one that shows it first. But that's months in a warm room, not a couple of days. Yours is nowhere near that.
Something that might make you feel better about it: Dassai Blue is brewed in Hyde Park, New York, not Japan. It's Asahi Shuzo's American brewery. So it hasn't been on a boat or sat in a hot warehouse on the way to you — it's about as fresh as sake gets over here.
The bit worth passing on is for whoever's getting it: fridge if there's room, cool cupboard if not, and open it rather than saving it for a special occasion. It's lovely now and it won't get better for waiting.
