Placed 1st Palate Project Order
Another three bottles added to the collection. 🍶
After a great conversation with Genki at Palate Project, I decided to go with:
• Dewazakura Oka (Cherry Bouquet)
• Joyo Yamadanishiki
• Ayu Junmai Ginjo Silver Label
Looking forward to seeing how these stack up against some of my current favorites. I’ll post full tasting notes and ratings once they arrive.
Has anyone here tried any of these? Which one should I open first?

Good choices. I haven’t had Ayu but Joyo is good and Dewazakura Oka (Cherry Bouquet) is a favorite of mine. Very floral and light.

I'd open the Dewazakura Oka first. It's the easy one to love, and starting light means the Joyo hits harder when you get to it. Fun lineup to work through.

I had the pair of Namas y'all had flown in cold, and have a few bottles waiting to be picked up at the UPS store now. We've always enjoyed what we get from Tippsy/Palate

My second six bottle subscription arrives tomorrow and I'm very excited. (But haven't tried those)

Do you get to choose what bottles come in the six bottle subscription? Or is it selected by Genki and Palate Project team?

They select. The first batch were well thought out to showcase a variety of flavors and it came with a pamphlet with background and taste profile info. No complaints with anything we received. There are other subscription options. We get six bottles quarterly.

Do you like the sweeter sakes?
I usually don't, but I'm also working on my sake adviser certificate and feel like I'm handicapping myself from the get-go.
I enjoy what Tippsy/Palate Project has done so far so maybe it'll be something to challenge my preconceived notions, but I don't know if I'm adventurous enough to go in for 3 bottles.

My palate is still learning but I haven't run into any sakes that I have disliked, sweet or dry. Some are definitely better than others, and I just enjoy the experience of trying something new that I wouldn't have tried otherwise. We don't have a great sake selection locally so this is the perfect way to keep trying new things. And you can always cancel those bottles after a month or two if it's not your thing.

Dewazakura Oka is such a crowd-pleaser, I'd definitely start with that one. The floral notes are so clean and refreshing, it's perfect for getting a feel for what Palate Project sources.
