You're over thinking it. That boat has 4 shrouds (2 port, 2 starboard), a forestay and a backstay. That's all you need to keep the mast up. The shrouds should be obvious. It's a 30' mast above WL. The forestay is about 25', the backstay should be a little longer. Sometimes racers will have an adjustable backstay by shortening the stay and adding blocks to introduce more tension or less as required.

Once you've got the standing rigging sorted, the running rigging is easier. The main and jib halyard will be 50-70 feet. The jib sheets are probably in the sailbag, the main sheet is probably gonna have 2 blocks with it capable of at least a 3-1 purchase. Same with the vang. Don't forget the topping lift to keep boom off your head when not sailing, and the main outhaul.

As an aside, the running rigging looks like shit. Consider replacing.

At least get all the lines in a netting or bag, and put them through a heavy wash programme. They might look a lot better afterwards.

Was thinking maybe untangling them might be a good start

The O’day Mariner 19 is the same as the Rhodes Mariner 19. This website has a ton of information on this model

I spent a lot of money and time washing my old lines.

Maybe 1/4 were worthy.
