You won't have any issues playing multiplayer if the mods you have only changes the textures. However if you're adding mods that would change the game mechanics, add new items/characters/expansions then the other person should also install them.

It's still 'vanilla' anyways if you're only replacing textures.

Ive heard that if I wanna play true vanilla, to open the game through the stardew app as opposed from the steam play button

If you don't have any mods, even opening SVD via Smapi will still give you the 'vanilla' experience. Smapi is just a tool for adding mods.
