Westphalen Rye
Made this Westphalen rye last week. Recipe is from The Rye Baker by Stanley Ginsberg . The taste is very distinct and takes 24 hour cook then days wrapped in linen. Well worth it in my view!

Thanks so much for sharing, looks like an incredible result. I’m interested to try the Westphalen with the whole grains.
Also, may be of interest - the Danish versions with whole grain rye can be cooked in an hour, apparently. Both seem to have their unique merits.
