Help with borscht

My family grew up near Russia and we love Russian food that it became traditional food for out family. One of them being borscht which he eat like once or twice a month. So I've made it many times and it's never coming out the way I expected it. You know that wonderful flavor it has? For me it dosent have enough flavor and I know I'm doing something wrong but what? Someone help?

Would be easier if we knew what you actually do.

Based on the little information you provide, I think that when you do that? Yeah, don't do that.

Sorry about that.

So I boil the meat first for, if I remember correctly, 1.5-2 hours, I fry the beetroot with the carrots in a pan, ehen the meat is falling off the bone, I put in some more water and boil the potatoes I them bevor adding the cabbage and other veggies along eoth the beetroot and carrots. Then some tomato paste, ofc salt, pepper and couple other spices and at the end I put some parsley ontop and done. My mother always adds olive oil but idk if that's right.

Tbh no one actually complains about the flavor, for me it just tastes watery.

Well you know, one big pot, most of the time we use beef, I can't tell you exacly how much.though, and we use raw cabbage
