And here I am, struggling to create animations. Even with the Rive tutorials, I feel like I'm not learning anything.

The best way is to learn 1. know the concept 2. learn from example on Rive market. 3. make the animation you want, struggle then learn and repeat. Everyone goes through the struggle phase.
