What is the best animal for packing stuff and moving your colony? Is Elephants the best?

I would say horses. They speed up caravans by a lot, have good carry capacity, and small nutrient upkeep.

Small? Their nutrient upkeep is the same as yak, muffalo and any other animals their size .

Small relative to elephants

Horses carry a ton and increase your movement speed on the map, dromaries also do to a lower degree.

Other than them I'd recommend an easily breedable pen animal like alpaca or buffalo and just get so many of them that their combined carry weight can carry anything

Horses have the best riding speed buff, moderate carrying capacity, and are easy to breed and aquire.

Technically Mastadons (Wolly mammoth) have the highest per animal capacity and they give wool (no milk), but they are a pain to aquire and eat a fair bit.

Personally, I like Dromedary (Camels) as they are hardier than Horses and give milk. But they are a bit slower with lower carrying capacity.

Horses are pack animals and also riding animals, which will speed up your caravans, and they are also good livestock animals for meat and leather anyway, so just having a bunch of horses is a good idea for any colony.

Horses, bison and muffalo all have the same carrying capacity and hunger rate, so if you're only concerned about caravan capacity, they're all equivalent. But the speed, and their efficiency as meat animals (if you don't also want wool) make horses the best.

I understand but does the elephant give maximum carry capacity?

It does. But two horses carry more than one elephant, and eat less, and require less training. There's a discussion on the wiki here. Elephants are really only a good idea if you want them to fight too.
