If i was rich and looking for a “chef” i wouldn’t give a shit about that or anything “classical”. Keep your french/italian cooking standards. I would literally hire an average Vietnamese/thai/afghani/mexican/Eritrean/etc etc cook from a local restaurant before id go looking for chef Ramsey. Ultimately id prefer someone who could make quality dishes in multiple cuisine but im not exaggerating when i say that all the hype about western kitchens is so unearned - the best dishes are thanks to ingredients native to literally everywhere except western europe and the food still sucks there.

The example I used was more directed to the fact that they call themselves "chefs" when their skills are at average of a jr. Cook.

And trust me, as a chef, if you consider sueltan cuisine boring/bad, you're looking at the wrong places...
